Creepmas Day 7: Fruitcake

Could there be anything creepier than fruitcake? Everybody hates it for obvious reasons.  They are nasty, dry, hard things that last forever.  They look gross too - full of weird unidentifiable bits of colored crap. No frosting or chocolate - how can they call it cake???



 

 
 
 

 
Perhaps this explains those funny bits of colored crap.
 
 
However, I don't hate fruitcake.  Sure I hate the kind pictured above but I don't have to eat those.  Instead his Lordship makes the most delicious fruitcake with dried fruit.  He agreed to make one last night.  To start you off, here is his recipe.  He did make adjustments for altitude but unless you live in the mountains, don't worry about those.
 
Here is the recipe for all you lowlanders:
 

Lord M's Fruitcake

1 c. regular flour
1 c. self -rising flour
1 t. baking soda
10 oz dried raisins
3 oz dried cherries
1 t. allspice
1 c. water
2 beaten eggs
1 stick butter
a pinch of salt
3/4 packed brown sugar
1 t. vanilla or almond extract
 
Put the butter, sugar, dried fruit, baking soda, allspice and water in a saucepan.   Bring to a boil and simmer 1 minute.  Pour into a large mixing bowl and allow the mixture to cool.
 
Grease a round cake pan or square 7 inch pan.
 
Add flour, eggs and salt to cooled mixture.  Mix thoroughly and pour the grease baking pan.  Bake at 350 degrees for about an hour until a knife inserted  into the center comes out clean.
 
I iced this cake with a mixture of powdered sugar and milk made to about the consistency of icing for a cinnamon roll.


Butter, sugar, dried fruit, baking soda, allspice and water in a sauce pan.  Bring to a boil then simmer 1 minute

 


Pour mixture into a bowl and cool

 


Add flour, salt, vanilla and two beaten eggs.  Mix well

 


Bake at 350 until knife inserted in the center comes out clean. 

Yummy - we had a piece last night and it was delicious.  Thanks your Lordship for making a fruitcake!

  1. I like fruitcake too. Dark or light. Lord M's cake looks wonderful! Dry ones are terrible though, it's true. However, I believe that can be guarded against by adding copious amounts of rum to the mixture.

    1. I just don't like those artificially colored preservative laden bits of dried fruit they sell in the grocery. While they made the cake colorful, they taste disgusting in my opinion.

    2. I agree that homemade fruitcake is the best ... especially since you can use reasonably healthy bits of dried fruit instead of red and green pieces of reindeer poop (very funny, BTW). And, as Debra suggests, bathing it in brandy every week until it's ready doesn't hurt either! :)

  4. I like Fruit Cake I miss the ones that my Nanny made. And I agree with Debra rum makes it so much better and keeps it from getting to dry.
