Ways to use an old pumpkin

So if you've been reading you'll know I rescued many pumpkins from the landfill on the Monday after Thanksgiving.  One became a Creepmas pumpkin and the another has become soup.  I made up a recipe based off of a great squash soup recipe that my sister shared with me some 15 years ago.  It was not hard though perhaps a little time consuming.  First, I cut a lid and clean the pumpkin.  Then I sliced it up along the natural indentations on the outside.  Once I had little strips of pumpkin, I peeled the skin with a potato peeler and chopped the pumpkin into cubes.

Next, I chopped an onion and browned it in a tablespoon of butter and some walnut oil. I then added the pumpkin, a carton of chicken broth and lots of spices - cloves, allspice, curry, cumin, salt and pepper.  I let this cook down for awhile - 3 hours at medium heat until the pumpkin was really soft





In batches, puree the pumpkin in a blender.  Add about 1 cup of 1/2 and 1/2  to the soup and taste to correct seasoning.  I added a teaspoon of sugar, 1/2 teaspoon of chipotle powder, and pepper.  Heat over low heat - don't boil - you'll curdle that cream.  It made a thick rich soup.  For a thinner soup just use more chicken broth.


A salad, a roll and a beer complete the meal.  I am glad you came to the parlor to enjoy this Creepmas dinner dinner.

  6. Ooh ooh, mmm mmm. I made jack-o-lantern soup once, with lamb pumpkin and turnip. It turned out okay.

    I think I want to try and recreate the pumpkin soup from Twilight Princess.
